Rose Shaped Spinach Pastry

Description

“Borek” has a very special and large place in Turkish cuisine. There are many varieties of “ borek” that you can make from thin dough sheets. Phyllo dough sheets, which we call it “yufka” ,can be found in small shops in Turkey, where women make and sell them fresh.You can also make this recipe with the frozen phyllo sheets which you can find in the frozen sections of the supermarkets. This vegetarian recipe is great for breakfast and can also be a delicious appetizer or a snack.

  1. Prepare the spinach filling:
    1- Put olive oil in a deep pan. Add onions and garlic. Saute gently over medium heat
    2- Add diced tomatoes and salt stirring occasionally
    3- Add spinach leaves and cook for 3-4 more minutes stirring continuously
    4- Remove from the heat and set aside

    5- Whisk egg whites,milk and vegetable oil in a small bowl and set aside

    6- Preheat the oven to 380 degrees Fahrenheit
    7- Cut the “ yufka” into quarters. You will have 8 large triangles
    8- Spread the egg white sauce on the triangle sheet using a pastry brush
    9- Divide the spinach filling into small pieces and spread it towards the large end of the triangle
    10- Start rolling from the large side of the “yufka” sheet till the end and swirl into a rose shape


    11- Repeat the process for each triangle sheet
    12- Arrange the rose shaped pieces on a baking tray
    13- Brush the egg yolk on top and sprinkle on nigella seeds
    14- Bake for 30-35 minutes or until golden brown
