Description

Leeks belong to the same family as onions, shallots, scallions, chives and garlic. It is a vegetable which is low in calories but high in nutrients. They are a good source of magnesium, vitamins A,C,K and antioxidants. 

You can create different types of dishes with leeks like hot or cold dishes, soups or pies. This recipe can be a great appetizer or a side dish especially for fish or even grilled meat or poultry.

Trim the tops and the ends of the leeks and clean under water very well (trying to rinse in between the layers). Cut into 1/2 inch rounds. Rinse under running water again. (You can soak the leek slices in salty water for at least 1/2 hour to get rid of the dirt in between the layers, if you have time)

 

Heat olive oil in a pan; add carrots, tomatoes and salt stirring occasionally over medium heat and cook for 5 minutes. Add leeks and rice. Add lemon juice and hot water. Cover and cook for 20 minutes over low heat or until the rice is tender. Remove from the heat. Let it cool down to room temperature. Transfer to a serving plate, garnish with dill and serve at room temperature or cold.
