Description

Peperonata is a very easy, healthy, and tasty recipe with sweet bell peppers, tomatoes, onions, and basil simmered slowly in olive oil. It is originally from Italy and typically served with crusty bread or crackers; so it can be great finger food or a starter for cocktail parties. Or you can simply serve it with pasta as a sauce.

  1. Add olive oil into a large pan. Saute with onion, garlic, salt & pepper over medium heat until the onions turn pink. Add peppers and tomatoes; cook slowly for about 30-35 minutes stirring occasionally.

  2. Toss with basil and remove from the heat. Squeeze the lemon on top. Scoop it over crusty bread or crackers and serve.
