Description

Lentils are an excellent source of plant-based protein and fiber.

You can make soups, salads or meals with them and they can give you the same amount of protein as meat. They are easy to cook and a healthy choice for a meal.

 

Ingredients

Preparation

    • Before starting to cook green lentils, soak them in cold water for at least 1/2 hour to save cooking time.
    • Put the olive oil in a pan, saute with the onions over medium heat until the onions turn pink.

    • Add tomatoes, carrots, green pepper, and salt, stirring occasionally for 3-4 minutes.

    • Add washed green lentils and 2 cups of hot water.

    • Cover and cook over medium-low heat for about 20 minutes or until the lentils are tender. ( You can add more hot water if you feel that the liquid has been absorbed).

    • Remove from the heat and serve.
