Description

You can braise, steam, stuff or bake the artichokes. In Turkey, you not only eat the hearts of the artichoke, but you also eat the entire bottom.

It is a very popular and delicious dish, but you need to know how to cut and peel the vegetable. Here, I’m gonna share a recipe that you can prepare from the hearts, which is easier to find in the US.

You can use frozen, canned or jarred artichokes.

    • Put the olive oil in a pan, sauté with the onions over medium heat until the onions turn pink.

    • Add tomatoes, salt, and sugar, stir them occasionally for 3-4 minutes.

    • Add artichoke hearts, peas, carrots, and 2 cups of hot water.

    • Cover and cook over medium-low heat for about 12-15minutes.

    • Remove from the heat. Add lemon juice.

    • Let it cool down to room temperature.

    • Garnish with parsley or dill and serve.
