Carrot Salad with Garlic Yogurt

Carrots are root vegetables and they are highly nutritious; good source of beta carotene, fiber, vitamin K, potassium, and antioxidants.

Ingredients

Preparation

  1. Heat olive oil in a skillet, add grated carrots and salt.

    Sauté for about 5 minutes on medium heat stirring occasionally.

    Remove from the heat and allow to cool.

    Mix yogurt, garlic, and crushed walnuts in a bowl.

    Combine carrots and yogurt mixture in a serving plate.

    Garnish with mint leaves or dill.
