Description

These ginger molasses cookies are absolutely delicious; crispy on the outside and chewy on the inside ( Thanks to my sister for sharing this all-time favorite cookie recipe with me).

Ingredients

Preparation

  1. Add the butter and the sugar to the bowl of your stand mixer ( or you can use a hand mixer). Cream them on medium-high speed until the mixture is soft and creamy for about 2-3 minutes.

    Mix in the eggs ( one at a time) and molasses at medium-high speed until everything is combined.

    Whisk the flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt in a separate bowl and add the mixture into the bowl of the stand mixer. Combine everything at low speed. You have to scrape down the sides of the bowl a few times until everything is incorporated.

  2. Cover the dough with plastic wrap and refrigerate for at least one hour.

    Preheat the oven to 350 degrees Fahrenheit.

    Line a baking sheet with parchment paper. Shape the dough with your hands into small balls, rolling each of them in the white sugar until they are completely coated.

  3. Space out the balls appropriately on the prepared baking sheet. Bake for about 10-11 minutes. Remove from the oven and transfer them onto wire racks to cool completely.
